Thailand is well known for incredible street foods. Here is an authentic adaptation of Thai flavors featuring Simplot SeasonedCRISP® Savory Battered Straight Cut Fries.

| Cheddar cheese, shredded | 10 oz. | 2 1/2 cups |

Preparation Instructions:
- Step 1
 - Preheat broiler.
 - Step 2
 - In a small bowl, whisk together Sriracha, mayonnaise and lime juice. Reserve.
 - Step 3
 - Prepare fries according to package directions. Toss freshly cooked fries with fish sauce, garlic powder, coriander and salt.
 - Step 4
 - Spread half of the seasoned fries onto a sheet pan. Cover with half of the cheeses. Top with remaining fries and then cover with remaining cheeses. Broil on high until cheese is melted and bubbly.
 - Step 5
 - Top fries with cilantro, peanuts, scallions, avocado and Sriracha mayonnaise. Serve with lime wedges.
