Roasted Broccoli with Parmesan and Panko

A healthy broccoli dish full of bright, satisfying flavors with a spicy kick. It's a definite crowd-pleaser.

| Lemon zest | 2 tsp. | |
| Lemon juice | 2 fl. oz. | |
| Red pepper flakes, crushed | 1 Tbsp. | |

| Salt | 1 tsp. | |
| Black pepper, ground | 1/2 tsp. | |
| Panko bread crumbs | 1-1/2 oz. | |
| Parmesan cheese, shredded | 1 oz. | 
Preparation Instructions:
- In a large bowl, whisk together 2 fl. oz. of the olive oil, lemon zest, lemon juice and red pepper flakes. Add the broccoli and toss to coat. Season with salt and pepper and toss again to coat. Transfer to a hotel pan and cook in a 400°F convection oven until broccoli is lightly roasted about 12-15 minutes. Combine the remaining 1 fl. oz. of olive oil, Panko and Parmesan and sprinkle over the top of the broccoli. Return pan to the oven for 5-7 minutes until golden brown on top.
