Simplot Harvest Fresh™ Avocados: Avocado Halves, Frozen 12/2lb 1 lb. 10 each
Simplot RoastWorks®: Roasted Sweet Potatoes 6/2.5lb 1 1/2 lbs. 5 cups
Eggs, prepared, over-easy 1 1/4 lbs. 10 each
Pork sausage, crumbled, prepared 1 lb. 3 3/4 cups
Kale, chopped, prepared 2 lbs. 7 1/2 cups
Preparation Instructions:
Step 1
Thaw avocado halves according to package instructions. Prepare sweet potatoes according to package instructions. Reserve hot. Slice each avocado half into five slices. Reserve cold.
Step 2
For each serving; place 1/2 cup of roasted sweet potatoes in a serving bowl. Place 2/3 cup of prepared kale alongside sweet potatoes. Place 3 oz. of pork sausage on other side of the bowl. Fan out avocado slices and top with an egg.
