This rich and creamy spread, with its undertones of garlic and lemon, would be a zesty replacement for mayonnaise on a sandwich.

Simplot Harvest Fresh™ Avocados: Avocado Pulp, Frozen 12/1lb 16 oz.
Simplot Simple Goodness™: Diced Red Peppers 3/8" 32 oz. 1 bag
Olive oil 1 fl. oz. 1/8 cup
Cream cheese, softened 4 oz.
Roasted garlic purée 3 Tbsp.
Caramelized onion, chopped 2 oz.
Lemon zest 1 tsp.
Salt 1/2 tsp.
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Preheat oven to 425˚F.
Step 3
Line a half sheet pan with foil. Spread diced red peppers in an even layer on the baking sheet. Drizzle with olive oil. Bake for 15-20 minutes, turning pan once halfway through baking until roasted and lightly charred. Cool to ambient, transfer to storage container and store refrigerated.
Step 4
In medium mixer bowl, combine avocado, cream cheese, and roasted garlic purée. Blend on medium speed until combined, about 1 minute. Gently fold in 4 oz. roasted red peppers, onion, lemon zest, and salt. Serve immediately or refrigerate until ready to serve.
