We took a quintessential Hawaiian comfort food dish and made it into a bowl featuring cauliflower rice, peppers and onions, and seared ground beef. Topped off with brown gravy and served with sweet potato salad and a fried egg. Aloha!

Ingredient Weight Measure
Simplot RoastWorks®: Roasted Sweet Potatoes 6/2.5lb 40 oz. 1 bag
Mayonnaise 16 oz. 2 cups
Vinegar, white 4 fl. oz.
Celery, small dice 4 oz. 1 cup
Scallions, thinly sliced 2 oz. 2/3 cup
Kosher salt to taste
Black pepper, ground to taste
Ground beef patties (8 oz. each) 5 lbs. 20 each
Simplot RoastWorks®: RTE Flame-Roasted Peppers & Onions Blend 6/2.5lb 40 oz. 1 bag
Simplot Simple Goodness™: Riced Cauliflower 1/20lb 32 oz. 7 1/2 cups
Gravy, brown, prepared 40 fl. oz.
Eggs, fried, sunny-side up 10 each
Parsley, fresh, chopped 10 Tbsp.
Preparation Instructions:
Step 1
For the Sweet Potato Salad: prepare sweet potatoes according to package instructions. Chill. In a mixing bowl, combine sweet potatoes, mayonnaise, vinegar, celery, and scallions. Stir until well combined. Season with salt and pepper to taste. Reserve cold.
Step 2
Season and cook hamburger patties. Reserve hot. Prepare peppers and onions and riced cauliflower according to package instructions. Reserve hot. Prepare eggs, fried sunny-side up. Reserve hot.
Step 3
For each serving; portion 3/4 cup riced cauliflower into a serving dish. Top with 4 oz. peppers and onions and place burger patty over vegetables. Pour 4 fl. oz. brown gravy over everything. Scoop 1 cup of sweet potato salad alongside the other ingredients. Top with 1 egg and 1 Tbsp. parsley.
