Indian Broccoli and Chickpea Dal
A flavorful (and spicy) grain and vegetable dish that works perfectly as a vegetarian entrée or as a side dish to grilled protein.

| Chickpeas, drained | 15 oz. | |
| Vegetable broth | 6 fl. oz. | |
| Serrano chile, minced | 1 Tbsp. | |
| Salt, coarse | 2 tsp. | |
| Cumin, ground | 2 tsp. | |
| Turmeric, ground | 2 tsp. | |
| Mustard seed | 1 tsp. | |
| Green onion, sliced | 2 Tbsp. |
Preparation Instructions:
- Step 1
- Heat olive oil in a large non-stick skillet over medium-high heat, add Cous-Cous Red Quinoa & Vegetable Blend, pearl onions and broccoli. Cook until warmed through.
- Step 2
- Add in chickpeas. Cook until hot. Pour in vegetable broth to deglaze pan and gain thick viscosity.
- Step 3
- Add in chiles and spices. Simmer until flavors bloom. Adjust seasoning. Garnish with green onion and serve.
