Simplot Simple Goodness™: Riced Cauliflower 1/20lb 2 lbs. 7 1/2 cups
Cilantro, fresh, finely chopped 1 oz. 1 cup
Lime juice, freshly squeezed 2 1/2 fl. oz. 1/4 cup
Simplot RoastWorks®: Flame-Roasted Corn & Jalapeno Blend 6/2.5lb 2 1/2 lbs. 1 bag
Pork, al pastor seasoned, prepared 1 3/4 lbs. 3 3/4 cups
Preparation Instructions:
Step 1
Thaw avocados according to package instructions. Slice each avocado half into four slices. Reserve cold.
Step 2
Prepare riced cauliflower according to package instructions. Fold in cilantro and lime juice. Hold hot. Prepare corn and jalapeño blend according to package instructions. Hold hot.
Step 3
For each serving; place 3/4 cup of cauliflower rice in a bowl. Place 2/3 cup corn and jalapeño blend alongside cauliflower. Place 3 oz. of pork on other side of the bowl. Finish with 4 avocado slices.
