How about a new spin on the old Taco Tuesday lineup? Load up a serving of Tater Gems® with seasoned ground beef and top with Cheddar Jack, onions, cilantro, and a dollop of guacamole.

Ingredient Weight Measure
Shredded beef, fully cooked 11 lbs. + 8 oz.
Simplot Simple Goodness™: Diced Onions 3/8" 3 qts.
Vegetable oil 1/2 cup
Tomato paste 1 1/2 cups
Chipotle peppers, canned, in adobo, chopped 3/4 cup
Chili powder 3/4 cup
Garlic, granulated 3/4 cup
Oregano, dried 1/2 cup
Black pepper, finely ground 3 Tbsp.
Cumin, ground 2 Tbsp.
Water 3 qts.
Beef base, reduced sodium 1/2 cup
Simplot Traditional Potatoes: Tater Gems®, Reduced Sodium 6/5lb 22 lbs. + 8 oz.
Cheddar Jack cheese, reduced sodium, shredded 2 lbs. + 14 oz.
Simplot Harvest Fresh™ Avocados: Western Guacamole, Frozen 12/1lb 4 lbs. + 8 oz.
Onion, fresh, diced 2 qts.
Cilantro, fresh, chopped 2 cups
Preparation Instructions:
Step 1
Thaw shredded beef under refrigeration.
Step 2
Preheat a tilt skillet over medium heat and add oil. Sauté onions, stirring frequently, for approximately 5 minutes. Add tomato paste, chipotle peppers, chili powder, granulated garlic, oregano, black pepper and cumin. Sauté, stirring constantly for 1-2 minutes or until spices are fragrant. Add water, beef base, and thawed shredded beef with its juices. Simmer the mixture over medium heat, stirring occasionally, until most of the liquid has evaporated, approximately 15-20 minutes.
Step 3
While beef simmers, prepare the Tater Gems® according to package instructions.
Step 4
For service; portion 3/4 cup of Tater Gems® using 6 oz. spoodle. Top with 1/4 cup seasoned beef using #16 disher, 1/2 oz. cheese using a 1 oz. spoodle, 1 Tbsp. guacamole, 1 heaping Tbsp. fresh diced onion, and 1 tsp. cilantro.
